Pear & Tonka Bean

What’s a tonka bean? The seed from a flowering plant native to Central and South America. A very complex aroma, hard to describe the taste, but there’s strong vanilla base notes, spicy and fruity. It has been used widely for many years in products ranging from tobacco pipes to fabric softener, and even as a less expensive vanilla substitute, so it’s a familiar aroma even if you’ve never had it before in ice cream. Anyway, it’s fantastic. And pear is a great partner – introduced to me in patisserie form at Altrincham Market! (Thanks – whoever you were!)
